There is a common confusion that exists with a Food Allergy and a food sensitivity (intolerance). The classic food allergy (such as shellfish or peanut allergy) is characterised by an immediate, often severe reaction of the immune system when exposed to that food (allergen). Food allergy sufferers react within a few minutes of eating or coming in to contact with the offending food, although they can be delayed by up to two hours.
